Chicken Pesto Penne Recipe
This dish is quick, easy, yummy, and will help you use the rest of the Pesto sauce you have.
Chicken Pesto Penne Recipe
3-4 cloves garlic, chopped
1/2 Onion, chopped
Fresh mushrooms
Chicken breasts
1/2 c. Pesto sauce
Penne pasta, cook separately. Reserve about 1-2 c. starchy cooking water
Pepper
Parmesan-Reggiano cheese (may substitute peccorino romano cheese)
Brown garlic and onion in extra virgin olive oil. Add chicken.
When chicken is almost done, add mushrooms. Combine remaining ingredients. Add starchy cooking water to help ingredients stick to pasta. Top with parmesan reggiano cheese. If you wish, you can add red pepper flakes, chopped parsley for garnish.
Note: You can change it up by substituting shrimp, chicken sausage. You can also also add other vegetables like bell peppers (I like red, orange, yellow), asparagus, broccoli, etc.
I buy parmesan-reggiano cheese from Costco, as I use it in many dishes (more easy recipes to come).
